Pomegranate Molasses
Pomegranate molasses is a heavy pomegranate syrup used in Mediterranean cooking. It is also an ingredient for our homemade grenadine recipe here on this site.
Pomegranate molasses recipe
- 4 cups pomegranate juice (POM Wonderful 100% pomegranate juice)
- 1/2 cup raw sugar
- 1 oz lemon juice
Heat all ingredients in a large saucepan over medium heat until the sugar has dissolved. Lower the heat and simmer until the volume of the liquid has been reduced to 1 cup. This should take a little more than an hour.
Remove from heat and let cool. Transfer to a sterile jar. Should keep in the fridge for about six months.
To make the 1.25 oz of molasses necessary for the homemade grenadine recipe on this site, use these quantities:
- 5 oz pomegranate juice
- 3.75 tsp raw sugar
- scant 1 tsp lemon juice
Use a deep saucepan or pot to make the molasses. You need sufficient head space in the pot because the pomegranate juice will bubble and splash and this is not fun to clean up. A splatter guard will help.
