Lemon Hart Demerara Rum 151
151 proof Lemon Hart Demerara Rum is a mainstay ingredient in classic Tiki drinks. Donn the Beachcomber is probably best known among the early Tiki icons for using this style of rum in many of the drinks he invented. Often it was a floater used to accentuate the drink, but sometimes it was a main ingredient.
Lemon Hart Demerara Rum is the only remaining rum of it's kind in general circulation. And it actually went away for a year or two while the company changed ownership. It is still produced in Guyana on the Demerara River but is now bottled in Canada.
Most 151 proof rums offer all fire and no flavor. Think Bacardi. They are used solely for adding heat to a drink. 151 proof Lemon Hart Demerara Rum is totally different. Yes there is heat from the high alcohol level, though not quite as much as you might think since there is some aging involved. But you also get the trademark Demerara richness--an earthy, old leather flavor profile that just keeps going and going.
This rum is not cheap, but keep in mind that a bottle will go a long way due to it's strength. I lived off of 5 bottles for a good 5 or 6 years and that was with fairly constant Tiki drink preparation (thought I make a large variety of drinks).
If you want a proper bar for making classic Tiki drinks, you need 151 proof Lemon Hart Demerara Rum. There is no substitute.
