- 1 oz White Rum
- 1/2 oz Peach Brandy
- 1 oz Pineapple Juice
- 3/4 oz Lime Juice
- 1/2 oz Honey Mix
- 1/4 cup Spearmint Leaf (packed)
- 1 cup Ice
Blend everything in a blender on high for 15 seconds. Pour into a large, chilled wine glass. Garnish with mint.

This is a rather light drink alcohol-wise. If you prefer, up the rum to 1 1/2 ounces.
I have adapted this recipe from Beachbum Berry's Remixed, increasing the lime and reducing the honey mix as I found the original recipe too sweet.
