Papirusa
- 1 1/2 oz Campari (I used Select, a similar amaro)
- 1 oz Sherry (Manzanilla or other dry sherry)
- 1 slice Lime
- 2 dashes Orange Bitters
- 2 oz Mineral Water (Topo Chico)
Build over ice, squeezing the lime into the drink. Give it a short stir to pull the thicker amaro up off the bottom.

Wondering how I could modify a Campari and Soda, I came up with this drink. It is named after the Manzanilla sherry that I used, Lustau Papirusa. Pretty damned good. Nice way to start the late afternoon on a warm day.
