  • 2 dashes Orange Bitters

Stir with ice and strain into a chilled cocktail glass.  Orange peel garnish.

With Fino or Manzanilla sherry, the orange peel suffices.  For Amontillado sherry (especially Lustau), I add a few cocktail cherries to break up some of the acidity from the sherry.
