French Pearl
- 3/4 oz Lime Juice
- 1/2 oz Rich Gum Syrup
- 1 sprig Spearmint Leaf
- 2 oz Gin (Plymouth of London Dry)
- 1/4 oz Absinthe
Gently muddle the lime juice, syrup and mint in a shaker tin. Add the gin, absinthe and ice and shake. Strain into a chilled cocktail glass. Garnish with a lime wheel and another sprig of mint. You want to see some little mint floaties in the drink.
