Rees Cocktail
- 2 1/4 oz Old Tom Gin
- 1/4 oz Sweet Vermouth
- 1 dash Angostura Bitters
- 1 dash Absinthe
Wash a mixing glass with absinthe. Add remaining ingredients and stir (no ice). Pour into a cocktail glass. No garnish.

This is a bit of an odd duck from The Old Waldorf-Astoria Bar Book. You may be tempted to use ice, but try it once without. I found the Rees to be quite enjoyable at room temp. If you must, chill the cocktail glass but use no ice in the mixing glass.
Be sure to tilt the mixing glass to get all the absinthe rinse out. Also, an aged Old Tom such as Ransom works well here.
