Princeton Cocktail
- 2 oz Old Tom Gin
- 3 dashes Orange Bitters
- 3/4 oz Port
Stir the gin and bitters with ice. Strain into a chilled cocktail glass. Slide the port down the side of the glass. It will naturally settle at the bottom. Orange or lemon peel, twist and discard.

I like tawny port in this drink, perhaps a 10 year. I find a nice 1-2 punch between the botanical / vegetal beginning and the smooth, sweet vanilla ending (should you resist stirring the drink).
I found this recipe in Imbibe!: From Absinthe Cocktail to Whiskey Smash. I also see it in The South American Gentleman's Companion going by the name Rio Red Gin.
