Hurricane (original version)
- 4 oz Dark Rum
- 2 oz Lime Juice
- 1 1/2 oz Passion Fruit Syrup
Shake with ice. Strain into a Hurricane glass filled with crushed ice. Flag garnish.

The Hurricane started out as a rather simple sour. Pat O'Brien invented it in the 1940's in order to use up a bunch of surplus rum he had to buy in order to buy Scotch (World War II caused shortages). He mixed passion fruit syrup with citrus, added a healthy measure of rum and served it in a hurricane lantern shaped-glass.
Usually lemon juice is specified but I find lime works better for me. Also, 2 oz of passion fruit syrup is too sweet for me so I have cut it back, though it does depend on which syrup you are using as they vary quite a bit in sweetness and acid profile. Figure out your proportions with a couple of half size Hurricanes before you start making the biggies.
