I make my Adonis with amontillado sherry usually. Something like Lustau is very nice. For the vermouth Carpano Antica works wonders.
You can use other sherries if you want as long as they have a dry profile. So Fino, Manzanilla or a dry Oloroso will work, too.
The Adonis is a great lower-alcohol cocktail. I like them if I want to tone down the booze but still drink something with concentration and complexity of flavor.
11/7/2020 - just tried Scrappy's Grapefruit Bitters instead of the usual orange. This combined with the orange peel garnish is a wonderful variation from the usual formula. Highly recommended!
