This is a Tiki riff on the Sidecar using rum instead of Cognac as the base spirit. In Beachbum Berry Remixed, Beachbum Berry specifies aged Barbados rum for this drink. Cockspur 12 Year works splendidly, as does Scarlet Ibis from Trinidad.
To contrast the clean citrus from the Cointreau and lemon juice, Appleton 12 Year makes a great match. It brings some Jamaican funk and depth to the party.
