Restaurants back in the 19th Century wanted to have a house cocktail to distinguish themselves from their competitors (this carries forwards to the present day). Delmonico's restaurant in New York City created the Delmonico No. 1 as their house tipple.
I found this to be an excellent cocktail. The botanicals in the gin swim well with the soft, aged Cognac yielding a Martini Special Cocktail or Martinez profile where the gin plays nicely with the other ingredients.
