Roffignac
- 1 1/2 oz Cognac
- 1 Tbsp Raspberry Syrup
- 1 tsp Raw Apple Cider Vinegar
- 4 oz Club Soda

The original Roffignac was made with raspberry shrub. Here we are making the shrub "on the fly". If you use a quality raw apple cider vinegar such as Bragg, this is a tasty drink. On the other hand, if you want to make the shrub ahead of time, go ahead use it instead of our "on the fly" version here.
Later versions of the Roffignac used whiskey, most likely rye.
Joseph de Roffignac may not have drank his namesake, for he was mayor of New Orleans from 1820 to 1828 and there appear to be no references to this drink until much later in the century. But shrubs have been popular since Colonial times, so I choose to think the mayor may have partaken.
