Apricot Rickey
- 2 oz Apricot Brandy
- 3/4 oz Lime Juice
- 4 oz Mineral Water
Peel the entire lime in one continuous piece. Pour apricot brandy in an ice-filled Collins glass. Squeeze the lime in the glass and fill with club soda. Twist the lime peel and rub it on the rim. Then drop it in the glass.

You need to use a fresh lime--no funky limes that have been in the fridge for 5 days. Because this drink is not cut with sugar, a not so fresh lime will be very noticeable. And bottled lime juice won't do, either.
Twist the peel as much as you can to spray as much lime oil onto the drink as possible. This really adds to the aroma.
